N95 and KN95 is effective against smaller particulate too. It is least effective at 0.3 microns in size (95% efficient there) and as you correctly state virus particulate are smaller than that. However, two factors make them highly effective at stopping virus particles. The first is a concept called brownian motion which pertains to the erratic movement of very small particles like virus particles. Since the non-woven material doesn't have a repeating structure, the particles smaller than 0.3 microns are easily caught by the charged fibers of these materials. The second and more important factor is that in order to become aerosolized, the virus adheres to the moisture in your breath as you exhale or cough, these droplets are much larger than the 0.3 micron size and thus are easily caught on the exterior layers of the mask.
